Breakfast is indeed the most important meal of the day. But a good lunch will provide you the energy you need in the middle of the day, especially when you’re having a busy one doing all sorts of outdoor activities. When you’re in the woods, you want to spend less time cooking and more time enjoying your food – so go for easy to prepare meals for lunch.

These quick camping lunch recipes are perfect for the outdoors!

Quick Spiced Chicken and Veggies

What you need:

  • 2 large chicken breasts
  • 3 large carrots, sliced into thirds
  • 4 red skin potatoes, halved
  • 2 ears corn, quartered
  • 5 sprigs fresh thyme
  • 1 tablespoon butter
  • 1 tablespoon olive oil plus more for frying
  • 1 tablespoon paprika
  • 2 teaspoons salt
  • 2 teaspoons onion powder
  • 1 teaspoon rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano

At home, prepare veggies and place on Ziploc bags. In a small bowl, combine paprika, salt, onion powder, rosemary, garlic powder, black pepper and oregano and place on Ziploc bag until ready to use. At the campsite, reserve 1 tablespoon of the spice mix. Place the rest on a large resealable bag along with the chicken. Marinate for 1 hour.

Place veggies in a bowl, drizzle with olive oil and sprinkle with reserved spice mix. Mix until veggies are well-coated. Heat oil in a pan and cook marinated chicken over medium high heat until browned. Transfer to a heavy duty aluminum foil then add the veggies. Top with butter and thyme and close foil to make a packet. Cook over a hot campfire until chicken is thoroughly cooked.

Turkey Meatloaf Foil Packet

What you need:

  • 1/2 kg. ground turkey
  • 1 large egg
  • 1/3 cup quick cooking oatmeal
  • 1/4 cup minced onion
  • 6 tablespoons barbecue sauce, divided, plus more for serving
  • 1 teaspoon dried marjoram
  • 3/4 teaspoon kosher salt

It’s advisable to prepare the meatloaf at home so all you have to do at the campsite is heat it over the campfire! Mix together ground turkey, egg, oatmeal, 3 tablespoons barbecue sauce, marjoram and salt in a bowl. Mix well and divide into 4 portions (4 x 2.5 inches).

At the campsite, place meatloaf portions on separate foils. Brush with barbecue sauce and cook over campfire for 20-25 minutes or until cooked through. Serve with more barbecue sauce. Best served with veggies.
